I developed this recipe because I want to eat healthier, but not sacrifice flavor.

SERVES 4 (change servings and units)

Ingredients

Directions

    In small bowl combine oats and milk--let absorb about 10 minutes.

    Combine absorbed oats and all ingredients--except for ketchup-- in a large bowl.
  3. 3
    Mix with large fork.
  4. 4
    Spray a 9x13 baking pan with cooking spray.
  5. 5
    Shape meat mixture into loaf.
  6. 6
    Brush with ketchup.
  7. 7
    Bake at 350 for 50 minutes.

    Enjoy.

This was a hit with everyone-myself, my husband, and my picky six year old. I didn't add the red pepper bc I didn't know if that would make it too spicy for my child. I do wish I had changed a couple of other things though. I'm not a huge fan of onion, so I wish I had added less-and maybe sauteed them first before adding so there would be less of a crunchy texture. Also, I think adding ketchup into the mixture and not just painting it on the outside, would make it more moist and flavorful. This was my first time making meatloaf though, so thanks for the great and healthy recipe!

    This went over SO well in my house and that is saying a lot considering DH and I are NOT meatloaf fans! It was so moist and juicy with great flavor! I will definitely make this again but in a double batch next time!

    Very moist and flavorful meatloaf. I didn't add the pepper (because I didn't have one) and it was great. I needed to add an additional 1/4 cups of oats because the mix was still pretty soupy after the required 1/3 cup. Thanks Richard!

    I loved it! I had a 3lb pack of 93% fat free turkey so I had to triple the recipe. I also substituted egg whites and added low sodium soy sauce since I had no worcestershire.. I was hesitant about the oats instead of breadcrumbs but the meatloaf was soooo moist and flavourful. I could not tell there were oats in there! I will definitely be making this one again.
