Rice Pancakes

Good for breakfast. Or you can leave out the onion and add 2 tbsp sugar and dried fruit and serve for dessert.

SERVES 4 (change servings and units)

Ingredients

    Simmer rice, onion, and 1/3 cup milk over low heat, covered, until the rice is soft and the milk is absorbed.

    Remove from heat, and add the rest of the milk and the egg.

    Drop mixture by tablespoonfuls into hot greased frying pan.

    Brown lightly on both sides.

    Serve with syrup, honey, etc.
