Posted for the Zaar World Tour 2006-Israel. From the "Best of International Cooking" cookbook. I haven't had the chance to try this recipe yet.

SERVES 6 (change servings and units)

Ingredients

    Preheat oven to 350ºF. Butter a deep baking dish; set aside.
  2. 2
    Peel and shred apples. In a medium bowl, beat together egg, salt and 1/2 cup sugar. Stir in raisins, shredded apple, rice, 4 Tablespoons of the butter, jam and almonds.
  3. 3
    Pour into buttered dish; dot with remaining 2 Tablespoons butter. Sprinkle with 1 Tablespoon sugar. Bake 40 minutes; serve hot.

    What a delightful recipe. Just the right amount of sweetness. The combination of apples, raisins and apricot jam was perfect with a little crunch from the almonds. I finely chopped my almonds which worked well for this. I know I'll be making this again. Thanks Bayhill

    We enjoyed this kugel very much! I used two organic apples and shaved them thinly with a vegetable peeler. Cooked the rice in the microwave and didnt have almonds so used ground walnuts. It needed just a little something so I also added some freshly ground nutmeg and a good sprinkle of cinnamon. The flavors are amazing! Almost an apple pie flavor with the crunch of the nuts and rice. Thank you Bayhill for a wonderful treat!

    This is simply delicious. Different from regular rice pudding, but this is a keeper.
