Refrigerator Potatoes (Make-Ahead Mashed Potatoes)

These potatoes are delicious. I think they are great when for Thanksgiving when there are so many other things that need to be done in the kitchen you really don't need the added burden of mashing potatoes. These may be made up to 1 week ahead! Note: Prep time includes cook time for boiling potatoes

SERVES 10 (change servings and units)

    Peel and cook potatoes.
  2. 2
    Drain well and mash until smooth.
  3. 3
    Add cream cheese, sour cream, seasonings and butter.
  4. 4
    Beat with hand mixer until smooth and fluffy.
  5. 5
    Place in lightly greased casserole dish.
  6. 6
    Dot with more butter.
  7. 7
    Refrigerate until ready to bake.
  8. 8
    Bake at 350 until heated through (about 30-45 min.).

These are the most awesome and delicious potatoes ever. I've been making these for years. It's such a help at holiday time to make them the day before (or even 2 days ahead). Creamy, delicious! I've also added an egg white before baking on occasion for extra creaminess. I've also heated them in the crockpot to save oven space on holidays. Thanks for posting - seems like every time I make them I have to check the cream cheese - sour cream ratio.

    add 1cup shredded chedder, 1 bunch green onions chopped,3/4tbs basil, 1tbs garlic 1tbs smoked paprika, 10 slices crisp bacon,1/2tsp red pepper flakes, 1tsp cajun seasoning, and you have some really killer spuds, i have people offering to pay me to make them for them

    I had a recipe similar to this at a bridal luncheon I recently attended and really wanted the recipe but was told it was a family secret. So I found this recipe on Zaar and I think it's almost, if not, the same thing. I halved the recipe for my husband and I and added a little garlic. I'll probably make this for holiday events this year since it can be made ahead and reheated. Thanks for sharing a great recipe!
