Refrigerator Bran Muffins

This recipe has been in our family for many years and is our favorite. It is not your typical dry bran muffin. It is very Moist and tasty.

SERVES 84 , 84 84 muffins (change servings and units)

    Pour boiling water over Bran cereal and cool. Cream together sugar and shortening in a large bowl, then add the remainder of ingredients. Pre-heat oven to 400 degrees. Bake for approximately 15 minutes, depending on the size of your muffins it may take longer. The batter can be refrigerated for up to 1 month. If you like you can add additional ingredients - I like to add Dates, and sometimes some Walnuts. A friend of mine recently suggested using boiling Apple Juice in place of the water for a different flavor, I plan on trying that the next time I make the batter. You could also add Raisins, Cinnamon, Chocolate Chips, Dried Cranberrys - whatever your taste is. I also like these muffins cold better than hot. I am not sure just how many muffins can come out of this recipe, but it makes quite alot.
