Refreshing Mojito by the Pitcher Mojitos

This is a refreshing Cuban drink. It's hard to stop drinking these on a hot summers day. I made these for the fourth of July and we went on to 3 yes 3 pitchers! If you don't have a muddle stick try a mortar and pestle or the end of a wooden rolling pin. Please use fresh lime if you cannot go ahead and try the already bottled lime juice but if you do think about that when you rate this recipe! I did both and there's nothing like fresh! Same goes for the fresh mint if you need to you can use frozen but I DON'T recommend extract. And for the sugar real granular is what helps muddles the lemon and extract the mint oils from the leaves.

    Place lime juice, mint and sugar into a pitcher.

    Using a muddle stick mash to release mint oils, and dissolve sugar into juice.

    Add rum and lots of ice topped with club soda. Adding more club soda to glasses if a lighter drink is desired.

    Garnish with fresh mint and lime slices.

These are so yummy and dangerous! I did not have white rum, but they turned out fine with gold. I used fresh mint from my yard and also garnished with mint. Everyone liked them even though they had never tried a Mojito before. I will use this recipe again and again! Thank you for sharing!

    DELISH!!! These were the star of the show at our Mojitos & Margaritas (M&M) party last weekend. I don't even know how many pitchers of these I made, but it was a LOT! I started off making these exactly as directed, but several people found them a bit too sweet. To ensure that everyone could "customize", I cut back on the sugar to about 2/3 to 3/4 cup, and provided extra sugar to my guests. I also found that some people liked less club soda, and others really wanted much more, so again, I set out the lime seltzer (which I used instead of regular club soda). I used probably a bit more mint leaves per pitcher, and used a wooden potato masher to muddle the sugar, lime juice, and mint...once it smells like a piece of Wrigley's Spearmint gum, it's going to be perfectly minty. Since there are so many mint leaves needed to really impart that minty tang, I found that straining a finished pitcher into a new pitcher and garnishing with fresh mint sprigs worked great. There are many, many new converts to this drink - thanks for a great recipe, RitaL...YUM!

    Wow! Rita, I can see how these could be highly addictive. The flavors mesh so well. It tastes like limeade with a twist! I admit it, I used bottled lime juice, and it still turned out fabulous. I can't even imagine how good it would be with fresh, but I'm planning to try it soon! Thanks for a great Summer drink!
