Redneck Casserole

My brother and I cook up this quick and easy recipe every Friday night when my mom is out with her friends/family. It's yummy yummy and has the potential to evolve into much more...but we like it just the way it is. I hope you enjoy!!

SERVES 4 -5 (change servings and units)

Ingredients

  • 1 (28 ounce) can baked beans

  • 6-8 hot dogs
  • 4 cups tater tots
  • 1 cup sharp cheddar cheese, shredded

Directions

    Set your oven to 450.
  2. 2
    Dump your can of baked beans (we use Bush's vegetarian) into a casserole dish. (We use a medium sized glass bowlish looking -- thing). Set the dish aside.

    Cut up your hotdogs into bite sized pieces and throw those into your casserole dish and mix until dogs are well coated with baked bean sauce.

    Cover the bean and dog mixture with tatertots. We usually use a couple handfuls. Use as many as you'd like. Just make sure to cover the mixture completely.

    Place the casserole dish in the oven for 1/2 an hour or until tater tots are golden brown. When Redneck Casserole is all cooked up, turn off the oven and sprinkle the top with cheese.

    Redneck Casserole is completely done when cheese is melted and you just can't take it anymore -- dig in! (You can mix pretty much anything with this dish. Sour cream, ketchup, mustard, hot sauce, etc.).

    We really enjoyed this recipe! I added 1/2 C. chopped onion and crumbled 3 slices of cooked bacon to it. This was so easy to make, a very frugal dinner and the perfect food for a cold evening. Thank you so much! This recipe is a keeper and I will make this often.

    Love the name of this recipe and I sure do agree that its a perfect name for it in that it isnt a sophistcated,complex blow your mind 5 star restaurant type dish however for what this recipe is,5 stars it gets from us,,Every so often I crave beans and hotdogs and this casserole sure fit the bill!! prepared recipe to the letter,we used B&M boston baked beans,it was extremelyyyyy easy to prepare,simple ingredients,cooking time was right on,tasted great, was very satisfying indeed!! it sure did hit the spot for my beans and franks cravings!!! We did enjoy your recipe very much and will make again with my next beans and dog craving!!!! Thank you for posting!!!! Debbie Note for it evolving into something more or for a change up,I could see adding a little molassass and brown sugar to the beans but recipe was great as is!!!

    Just made this for lunch. It's very simple and turned out very tasty. It has a unique, hearty flavor. I used pinto beans (just because that's what I had in the pantry) and cocktail smokies instead of hot dogs, and I crumbled up the tater tots on top instead of adding them whole. I'm a single guy and I don't cook much, but I'm trying to get into the habit of cooking more. This is a perfect recipe for someone like me. I’ll certainly make it again.
