Directions

    Combine all spices in a small bowl and set aside.
  2. 2
    Preheat oven to 425°. Cut fish into 4 (two per serving), and place fillets in a 9 x 13-inch baking pan.

    Melt butter in a small bowl in the microwave for 10-20 seconds. Brush the top of each fillet with butter, squeeze little lemon juice on the fish, then sprinkle the spice blend evenly over the top of each fillet.

    Arrange 2 to 3 tomato slices over top of each fillet.
  5. 5
    Sprinkle grated parmesan cheese over each tomato slice. Each slice should be about half covered.
  6. 6
    Bake the fish, uncovered, for 8 minutes, then turn oven to a high broil and continue to cook for 6 to 8 minutes, or until cheese on tomatoes begins to brown.

    Serve two pieces of fish per serving with rice on the side.

Simply awesome. It's so simple, so easy, so quick and easily made with things common to your kitchen. I made this exactly as stated and we all gobbled it up VERY quickly and wished I'd made more. This is definitely a keeper in our home. I'll use this one over and over and over again. YUM! Thank you so much for the great, easy recipe!

    Great recipe with wonderful flavor and color. I had to bake the fish a little longer to get it fully cooked. Also great is that it all can be made in one dish, saving on the clean-up effort. Instead of melting the butter in the microwave, I put the butter directly in the baking pan and melted the butter in the oven while the oven was preheating. Then I dipped the fish in the melted butter in the pan.

    This was wonderful! I brushed it with olive oil instead of butter and added a little more cayenne for an extra kick. It isn't easy to find great fish recipes-thanks!
