Directions

    Combine all spices in a small bowl and set aside.
  2. 2
    Preheat oven to 425°. Cut fish into 4 (two per serving), and place fillets in a 9 x 13-inch baking pan.
  3. 3
    Melt butter in a small bowl in the microwave for 10-20 seconds. Brush the top of each fillet with butter, squeeze little lemon juice on the fish, then sprinkle the spice blend evenly over the top of each fillet.

    Arrange 2 to 3 tomato slices over top of each fillet.
  5. 5
    Sprinkle grated parmesan cheese over each tomato slice. Each slice should be about half covered.
  6. 6
    Bake the fish, uncovered, for 8 minutes, then turn oven to a high broil and continue to cook for 6 to 8 minutes, or until cheese on tomatoes begins to brown.

    Serve two pieces of fish per serving with rice on the side.

I am not a baked fish person per se, I prefer my fish (cod) to be deep fried and I dont like fish with a strong fishy flavor. My wife and I decided to try cod for a change in diet from red meats and chicken. We found this recipe and WOW! I love this dish and we went with the Greek Garlic Potatoes dish for a side with spinach with tomatoe and sautéed in olive oil, garlic and spices. This recipe is over the top good.

    Very good! I don't made fish very often, but I was feeling adventurous and I'm glad I chose this recipe. It is delicious!

    Great recipe with wonderful flavor and color. I had to bake the fish a little longer to get it fully cooked. Also great is that it all can be made in one dish, saving on the clean-up effort. Instead of melting the butter in the microwave, I put the butter directly in the baking pan and melted the butter in the oven while the oven was preheating. Then I dipped the fish in the melted butter in the pan.

    This was wonderful! I brushed it with olive oil instead of butter and added a little more cayenne for an extra kick. It isn't easy to find great fish recipes-thanks!
