Red Lentil, Tomato and Spinach Soup

This is an Indian dish high in Iron. I found this on line and tweeked a bit. Both tomatoes and spinach are good sources of iron. They complement each other. Not in just taste but work together to help the body absorb the iron.

SERVES 4 (change servings and units)

Ingredients

Directions

    Heat the butter in a pan and add the onions, garlic and peppercorns.
  2. 2
    When the onions turn translucent, add the lentils, tomatoes, salt and 2 cups of water and cook till the dal is tender. About 20 minutes.

    When cool, blend to get a smooth purée.
  4. 4
    Add the spinach, milk and bring to a boil.
  5. 5
    Finish by adding the lemon juice.
  6. 6
    Serve hot.

    After all the great reviews, I was excited to try this recipe. What a disappointment! I found it to be low on flavor and even lower on presentation.

    This was great. I added cilantro and mint, used canned tomatos, and skipped the milk. The fresh herbs really added to the flavour.

    This sounded so good and easy I just had to try it and we weren't disappointed. This made just enough for my husband and myself as part of our dinner tonight, with just enough leftover for my lunch tomorrow. The amount of salt wasn't listed so I added that and some pepper to taste. Delicious soup, thanks for posting this Rita!
