Red Beans and Rice Like Popeye's

This is my version of Popeye's Red Beans and Rice. It is the final result after many disastrous attempts, thank goodness for a husband with a cast iron stomach.

SERVES 4 -6 (change servings and units)

Directions

    Mix all ingredients well in a crock pot.

    Cook on low for 6-8 hours.
  3. 3
    Remove bay leaf.
  4. 4
    Serve with steamed rice with hot sauce on the side.

I am a Popeye's fanatic, so I was excited to find this recipe. However, I was majorly disappointed with the results. The beans were completely dried out, and the bland flavor was nothing like Popeye's red beans and rice.

    This tasted quite nice made as directed, but was amazingly dry, particularly compared to Popeye's. Toward the end I added about 1/8 cup of water which really didn't do anything. Perhaps leaving some of the bean liquid in would have helped. I'm not sure what I did wrong, if anything. I think I'd like to experiment with it somehow because we really liked the flavors. Thank you for posting, mandabears!

    By golly you've done it! I too have spent years trying to duplicate Popeye's beans. When I got the idea of looking on the net most recipes were something I'd already tried. This one sounded like MAYBE so I tried it.THANK YOU
