Really Easy Broccoli Soup

This comes from the Company's Coming Soup and Sandwich Cookbook by Jean Pare. It's so quick and easy to make after a long day at work.

SERVES 3 -4 (change servings and units)

Ingredients

Directions

  1. 1
    Cook broccoli in water until tender.
  2. 2
    Do not drain.
  3. 3
    Add remaining ingredients except cheese and simmer for 3 or 4 minutes.
  4. 4
    Run through blender until you have desired consistency. ( you can set aside a few flowerettes for garnish).
  5. 5
    Stir in cheese if using.
  6. 6
    For Vegetarian do not use Cream of Chicken.

This was delicious. doubled recipe and picked 1 can cream of chicken and 1 can cream of broccoli. For the cheese i used mix of cheddar and velveeta. Did imulsion blender to puree. Was excellent. Put in my Bread Bowls for Soup (Or for Anything)! bread bowls for anything. Is a keeper

    Yum! Everyone loved it. Next time I will double the recipe. I used a frozen 16 oz bag of broc. and cream of mushroom soup. Oh, I skipped the cheese; but, I bet that would make it unbelievable!

    This is a good soup to make on a lazy day because it is so easy. I was even so lazy that I took my potato masher to the broccoli as I did not want to clean up the blender. Made for 1 2 3 Hit Wonders game 2007

    this was easy enough with great flavor, I used half each milk and half and half and also added in some garlic powder and cayenne pepper, I also included the cheese, thanks for sharing Dreamer!
