Raspberry Sauce

A very delightful sauce that can be used on various dishes. When using the sauce on a cheesecake, let it drizzle over the edges. When serving the cheesecake, spoon 2 tablespoons on the serving plate, the place the cheesecake piece into the sauce. You can also substitute and use blueberries for a sauce.

2 cups (change servings and units)

    In a medium size saucepan, add raspberries and sugar and bring to a boil mixing well until sugar is dissolved.

    Strain through a very fine sieve or a cheesecloth.
  3. 3
    Return puree' to saucepan.
  4. 4
    Add lemon juice and Brandy and stir well.
  5. 5
    In a cup, mix together tapioca starch and water until smooth.
  6. 6
    Bring raspberry puree' back to boil and add tapioca starch mixture slowly using a whisk to mix well until sauce thickens to your desired consistency.

    You may use this sauce hot or let it cool.

This sauce was FANTASTIC. And so easy to make. I made a reduction with it, and drizzled it over Everyday Living Lemon Squares (#117636). Thanks for sharing this sauce recipe.

    I made this using frozen raspberries and the results were great. Last night I served this on chocolate cake. This morning the left overs are going on pancakes. What a great and versitile sauce.

    This is an excellent simple recipe which I used as a topping for #63073. Perfect. I did use icing/confectioner's sugar as we did not have caster sugar available.

    A wonderfully flavorful sauce. I did add a touch more sugar, my raspberries were just not as sweet as usual this year. Yes I did dash out to get the brandy! Spooned over Cool Monday's chocolate glazed Chocolate Bundt made for an absolutely fabulous weekend dessert. Thank you for sharing.
