Raspberry Crisp

Oh, what you can do with fresh berries!! This is scrumptious!!

SERVES 9 (change servings and units)

Ingredients

Directions

    Crush 1 cup berries; add enough water to measure 1 cup.
  2. 2
    In saucepan, mix sugar and cornstarch; stir in raspberry mixture.
  3. 3
    Bring to a boil; cook and stir for 2 minutes.
  4. 4
    Remove from heat, stir in remaining berries.
  5. 5
    Cool.
  6. 6
    In bowl, combine oats, flour, brown sugar and baking soda.
  7. 7
    Cut in butter to make crumbs.
  8. 8
    Press half into a greased 9x9 baking dish.

    Spread with berries.
  10. 10
    Sprinkle with remaining crumbs.

    Bake at 350* for 25 minutes.

    This was just the recipe I was looking for! My whole family enjoyed this. Even my DH, who doesn't usually eat any fruit desserts other than those made with apple. We topped it with a little ice cream. It was sweet...but did have that raspberry tartness, almost as an aftertaste. DELISH! Thanks Mizznezz!

    Wow! Scrumptious is the best word to describe this. The recipe looked very similar to one I have which uses a jar of raspberry jam, but using fresh berries makes a huge difference. A big thumbs up!

    This was excellent. Just the recipe that I was looking for. Very easy to make and the taste was wonderful. I picked more berries this morning so that I can make this again.
