Great tasting cookie recipe that I've made since I was able to bake. Nice combination with the oatmeal, coconut, and Rice Krispies.

4 dozen cookies (depending on size) (change servings and units)

Ingredients

Directions

    Preheat oven to 375°F.
  2. 2
    In a small bowl, combine flour, baking powder, baking soda and salt; set aside.
  3. 3
    In a large bowl, combine butter, brown sugar, sugar, and vanilla extract; beat until creamy.
  4. 4
    Beat in eggs.
  5. 5
    Gradually add flour mixture; mix well.
  6. 6
    Stir in oatmeal, coconut, and Rice Krispie cereal; mix well.

    Roll into small balls and flatten with hand.
  8. 8
    Bake on ungreased cookie sheets for 10-12 minutes or till light brown.

These are AWESOME! Just like I wanted! Moist, chewy inside, a nice crispy outside, a perfect blend of everything! It made 80 small cookies for me. I think that a nice addition to this recipe would be a teaspoon of lemon zest. I will try it next time I make these, and I WILL definitely be making these again! My search for the perfect ranger cookie is now over!

    Crispy on the outside, chewy on the inside. I baked these at 350 for 12 minutes. Very good and easy. Keeper file

    Very Yummy!!! Easy to make and my kids loved them! They said I should add chocolate chips or the skor pieces next time.

    These are very tasty and easy to make. I made them with the kids I babysit and they thought they were great too! We used 1 cup of chocolate chips in place of the coconut and Special K instead of Rice Krispies. Those were the only adjustments we made. We got 51 cookies out of the recipe. Thanks!
