Ramen Taco Bowls

A quick, easy lunch.

SERVES 2 (change servings and units)

Ingredients

Directions

    Cook hamburger and onion until meat is no longer pink; drain off fat.

    Stir in tomatoes, taco seasoning and water.
  3. 3
    Bring to a boil.
  4. 4
    Add ramen noodles and cook and stir for 3 to 5 minutes or until noodles are tender.
  5. 5
    Spoon into bowls and sprinkle with cheese and tortilla chips. Serve with sour cream and salsa for additional garnish.

    My 11 yr old daughter took one bite and declared this to be "an immediate 5 stars!" We didn't have any meat so we left that part out. The only other change we made was to use a can of RoTel tomatoes/chilies and decrease the taco seasoning to 1 tsp (to balance the extra spices in the RoTel). Thanks for posting a new way to fix Ramen for the kiddos! :o)

    Very quick and easy to make. I used ground turkey and cheddar/monterray jack cheese as that was what I had on hand. My DDs both loved it. I added a drained can of corn and diced avocados as a garnish. Thanks for posting this recipe.
