Quick and Easy Six Cheese Tortellini Bake

A rich and creamy tortellini casserole, with a gooey cheese crust. Get creative, try mascarpone or ricotta in place of the cream cheese. Or, try smoked mozzarella or fontina on top. This would also be wonderful with wild mushroom tortellini and a jar of alfredo sauce instead of marinara. Adjust the recipe to your taste. Enjoy!

SERVES 4 (change servings and units)

Ingredients

  • 1 (16 ounce) package cheese tortellini (fresh, frozen, dried, or refrigerated)

  • 4 ounces cream cheese
  • 3 cups marinara sauce (or your favorite pasta sauce)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup parmesan cheese

Directions

  1. 1
    Preheat oven to 450 degrees.
  2. 2
    Cook pasta according to package instructions, but just shy of al dente (the pasta will continue to cook in the oven).

    Meanwhile, heat the cream cheese and the marinara sauce in a medium saucepan over medium heat until the cream cheese is melted and smooth.

    Prepare a 2qt. casserole dish with non-stick cooking spray.
  5. 5
    Drain the pasta, and add to the casserole dish.
  6. 6
    Pour the creamy marinara sauce over the pasta.
  7. 7
    Top with mozzarella and parmesan.

    Bake 10-15 minutes, or until top is golden and bubbly.

This was decadently good! The cream cheese makes it super rich so you can't eat a ton of it, but this is something I will def make again and again!

    Made 2 servings, and it came out great, even with 1/2 a cup less sauce available. Very cheesy and tasty. I only counted 4 types of cheeses though: the tortellini cheese, mozzarella, parm, and cream cheese. Will make again!

    Yum-O! We love cheese anyway, but the blend of flavors here were great. I couldn't help but try it with both marinara and alfredo. We loved the alfredo best but I think it really depends on the type of marinara. I picked a very strong one! Still delicious..it's just that the alfredo/ricotta blend won out over the marinara/cream cheese blend. Thanks for a great recipe! Adding my picture...reviewed during PAC Fall '08.
