Quick and Easy, Lightly Curried Cauliflower and Egg Cheese

A quick all-in-one sauce can be made in minutes, while croutons give the dish a delicious crunchy topping. From : The Inspired Vegetarian

SERVES 4 (change servings and units)

Directions

    Boil cauliflower and onion in enough salted water to cover, until they are just tender. (10 - 15 minutes) Be careful not to overcook. Drain well.
  2. 2
    Arrange the cauliflower and onion in a shallow ovenproof dish, and scatter over the chopped egg.
  3. 3
    Put the flour, curry powder and butter/margarine in a saucepan, and cook gently, stirring constantly, to a smooth paste. Add the milk gradually, stirring all the time, gradually bring to the boil, stirring well, until thickened and smooth.

    Stir in the thyme and seasoning and allow the sauce to simmer for a minute or two.

    Remove from the heat, and stir in about 3/4 of the cheese.
  6. 6
    Pour the sauce over the cauliflower, scatter over the croutons, and sprinkle with the remaining cheese.

    Brown under a hot grill until golden and serve. Delicious with thick crusty bread.

This is an excellent dish!! I made this as a side to steak and we all loved it. My hubby loves cauliflower cheese and he has just said this is his new favourite. He raved and raved all the way through the meal on how yummy it was. I have to agree it is a really lovely way to prepare cauli and I love everything from the sauce to the egg and the croutons. The only change I made was to use gruyere cheese instead of cheddar. Another great one Karen

    A nice and different way to enjoy cauliflower! I halved the recipe. I used homemade croutons. Thanks for a tasty dish! Made for PRMR game.

    This is a delicious use of cauliflower and should appeal to those who may not normally care for it. The sweetness and texture from the chopped boiled egg, mild sauce with a hint of curry, and the use of croutons make this recipe very, very special. Thank you Karen for posting this yummy recipe!

    This is a really easy to follow recipe. I loved the different taste of the eggs, onion and curry powder with the cauliflower. I didn't use wholemeal flour as I only I had plain on hand and made my own croutons using wholemeal bread. I think it would just as nice with breadcrumbs also. A delicious and different way to serve cauliflower. Thanks Karen for another great tasting and quick easy recipe.
