Quick White Bean and Spinach Soup

This is a quick South Beach Diet friendly soup. It is brothy, but the beans are very filling. I adapted a recipe from the cookbook to suit the ingredients that I had on hand.

SERVES 4 (change servings and units)

Ingredients

    Bring the chicken broth to a boil in a medium pan.
  2. 2
    Add the spinach and allow to boil for a bit and wilt down the leaves, stirring often.
  3. 3
    Reduce heat and add the rinsed and drained beans, roasted garlic, and V-8 juice.

    Simmer gently for 5-10 minutes.

    Season with salt, pepper, and red pepper flakes, to taste.

This was a great tasting soup that was so easy to make! I needed to use up the rest of the spinach and found this recipe. Definitely add the parmesan cheese. I also used 2 cans of beans and added red pepper flakes. But it's still good without the cheese as I'm eating the leftovers right now for lunch. Keeper file for sure!

    This went well with some panini sandwiches. I suggest using a high quality chicken stock. This is a great "throw-it-together-very-quick" soup. Thanks for a keeper.

    I made this for a quick lunch today, and I really enjoyed it. I added an extra can of beans, and am pretty sure I added extra spinach (I didn't measure it). I used a large clove of minced fresh garlic, rather than roasted, so I added it when I added the spinach. This is a very nice, quick dish, but I especially love the fact that it is also good for you. Thanks for posting it!

    This is a winner and will become a regular in our home! Danny, my SO, was still talking about it the next day. Quick, easy and only few ingredents. Very filling but we ate it all even though I made a double batch. I accidently put too much red pepper flakes in and it was a bit too hot for me, added some butter, and that toned it down. I love basil, so I added a bit of it also as well as extra spinach.
