Quick Turkey Pot Pie

A Wonderful way to use leftover turkey. Came across this recipe recently and actually just tried it for lunch today and thought it was quite nice and wanted to share it here.Hope you enjoy it as much as i did.

SERVES 4 (change servings and units)

Ingredients

  • 2 cups mixed vegetables
  • 2 cups cooked turkey, chopped

  • 1 (10 ounce) can cream soup, undiluted (chicken or mushroom)
  • 1 cup Bisquick
  • 1 egg
  • 1/2 cup milk

Directions

  1. 1
    Place turkey and vegetables in a 8 inch pie pan.

    Cover with soup.
  3. 3
    Mix egg,milk and bisquick.
  4. 4
    Pour over top.
  5. 5
    Bake at 400F 30-35 minutes or until golden.

    Serve with favorite salad.

I made this last night for dinner to use up some turkey I had in the freezer. The only thing I did was add some salt and pepper before I poured the bisquick mixture over. This was so easy and tasted really good! I will make this again in the future to use up left over meat and veggies. Thanks for sharing.

    This was good, but I think there could have been more of the turkey/vegie mix and/or less of the Bisquick crust. The crust was a little hard, so I'm not sure I could add the egg (for my own preference). I'd also suggest adding some salt and pepper to the soup before putting over the turkey and vegies.

    This was perfect for a yummy and easy way to use the thanksgiving turkey leftovers. The bisquick was a perfect substitute for a crust and much quicker since I didn't have a pre-made crust on hand. My one year old and husband both loved it- thanks so much.
