Quick Sausage Stuffed Acorn Squash

This is a stick to your rib meal that is quick to fix in that you can use the microwave to cook the squash. It comes from Quick Cooking magazine.

SERVES 4 (change servings and units)

Ingredients

    Cut squash in half and remove seeds.
  2. 2
    Place squash cut side down on microwave safe dish with 1/4 inch water and microwave on high for 10-12 minutes, or until just tender.

    Meanwhile, crumble sausage into large skillet and add celery and onion.
  4. 4
    Cook over medium heat until meat is no longer pink, drain.
  5. 5
    Remove from heat and stir in sour cream.
  6. 6
    Spoon sausage into squash halves.
  7. 7
    Cover and microwave on high for 1 minute or until heated through.

This was great! I halved the recipe and added in some chopped mushrooms and 1/4 t. rubbed sage. I also used 1 sweet italian turkey sausage for the meat. It was delicious and I can't wait to make it again.

    This was so fast and easy to make. I made 1/2 recipe for DH and I. It would not have all fit in my microwave at once (maybe plan double the time for cooking if doing whole recipe). Used plain yogurt instead of sour cream for DH, but I liked mine with the sour cream better. Was a bit too sausagey towards the end of the meal for me, might do 1/2 ground turkey, 1/2 sausage next time, but it was still good. Thanks!
