Quick Fried Rice

so tasty and accompanies so many meals

SERVES 2 -3 (change servings and units)

Ingredients

  • 1 cup basmati rice (cooked and cooled)
  • 1/2 cup olive oil
  • 1/2 onion (finely chopped)
  • 1/2 red pepper (finely chopped)
  • 1 cup frozen peas
  • 1 cup chicken stock (chicken stock cube)
  • 1 egg (beaten)
  • 2 tablespoons passata
  • salt and pepper (to taste)
  • black pepper (to taste)

Directions

  1. 1
    heat oil in a wok or large pan,add onion,red pepper and passata and fry gently untilonions are soft about 5 minutes add peas and cook for a further 1 minute.

    stir in the beaten egg and keep stirring until set and mixed well.

    then stir in the stock.
  4. 4
    gradually add the rice stirring all the time.
  5. 5
    once heated through stand for a couple of minutes and serve.
