Quick Cookie Dough Cheesecake Bars

I can't remember where I picked up this recipe. It's very easy---my 15 y/o has been making it for the last several years. It's a family favorite!

SERVES 8 -12 (change servings and units)

Ingredients

  • 1 (8 ounce) package cream cheese, room temp

  • 1/3 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla

  • 1 (16 ounce) package refrigerated chocolate chip cookie dough

Directions

  1. 1
    Preheat oven to 350°.
  2. 2
    Divide cookie dough in half; press half of dough into an 8x8 pan or pie plate.

    Cream the cream cheese and sugar until smooth.
  4. 4
    Add egg and vanilla; beat until smooth. Pour over cookie dough.
  5. 5
    Put remaining cookie dough on top of cheesecake mixture in small chunks.
  6. 6
    Bake at 350° for 35-40 minute or until set.

    You may double this recipe and use a 13x9 pan.

    Cool 1 hour and refrigerate. Cut into small squares.

So far these are just OK for us, good don't get me wrong, but I was expecting more cheesecake. Next time I will double the cheesecake part and see if thats what i'm looking for. Quick and easy though

    I make these multiple times a year for work potlucks and the girls devour them everytime! They even eat them the next day for breakfast if there are leftovers.

    This recipe is everything it says! Quick, Cookie Doughy and cheesecakey! My only tip is to use damp hands to spread the dough so it won't stick to your hands! This recipe will be used a lot and passed around just as much, I'm sure!

    These were amazing! They could not be more simple, and they taste ridiculously good. I made a batch of these to bring to a weekly football get together and they got gobbled up in an instant. Everyone wants me to make these again soon. I will make these as part of my Thanksgiving and Christmas dessert spread as well. They taste and look like they took a lot of time and effort, no one has to know how easy they are. This recipe is a real keeper, thanks so much for posting this!
