Fast snack salad

SERVES 1 (change servings and units)

Ingredients

  • 1 cup carrot, shredded
  • 1/2 cup apple, shredded (I use Granny Smith)
  • 1 tablespoon lemon juice
  • 2 tablespoons apple juice

Directions

    Place all ingredients in a small bowl.

Mmm, this is one of my favourite ways to eat raw carrots and apple! Its simple, quick, easy and so yummy!!! Its great for lunch or as a super healthy snack for in between meals. I left out the lemon juice as Im allergic to it, but to me that didnt harm the recipe at all. THANKS SO MUCH for sharing this lovely recipe with us, peachez! Made and reviewed for An Apple A Day Tag Game Octobre 09.

    We really wanted to love this.... I made it specifically thinking I could get my 9 year old to eat a salad at dinner but none of us liked it. It was tart and the swetness from the apple and the juice did not shine through. Thanks for posting; Sorry we didn't like it.

    Simple to make, refreshing and SO, so scrumptious – and only 95 calories and 0.4g fat! And it takes no longer to make than say a grilled sandwich! I used baby carrots (beautifully sweet) and one Granny Smith apple. I really look forward to making this again, and sharing it with family and friends. Sometimes simple is best! Thanks for sharing, peachez!
