Quick Beef Noodle Soup

This is great for a weeknight meal. It's quick and easy and very hearty!! I got this out of Quick Cooking magazine.

SERVES 6 -8 (change servings and units)

Ingredients

  • 1 lb lean ground beef

  • 1 (46 ounce) can V8 vegetable juice

  • 1 (2 ounce) envelope onion soup mix

  • 1 (3 ounce) package beef-flavor ramen noodles

  • 1 (16 ounce) package frozen mixed vegetables

Directions

  1. 1
    In a large saucepan, cook beef over medium heat until no longer pink.
  2. 2
    Drain.
  3. 3
    Stir in V8 juice, soup mix, contents of ramen seasoning packet and mixed vegetables.
  4. 4
    Bring to a boil.
  5. 5
    Reduce heat; simmer, uncovered, for 6 minutes or until vegetables are tender.

    Return to a boil.
  7. 7
    Stir in ramen noodles.
  8. 8
    Cook for 3 minutes or until ramen is tender.
  9. 9
    To freeze: Place in a rigid container and freeze.
  10. 10
    To heat: Thaw, place in a saucepan and stir until heated through.

    Super good. My kids loved it. Used a mixture of white corn, baby carrots, and asparagus to kind of kick it up a bit. Yumm-o! Thanks for a great "different" sort of super easy recipe.

    Good and easy to make. I followed the recipe as written other then I used Homemade Dry Onion Soup Mix for the soup mix and I used canned mixed veggies instead of frozen (personal preference).

    I encourage everybody to try this recipe!! We made this as directed and it turned out great. I keep a container in the freezer and dump leftover veggies in it to save for another day and reduce food waste. This was the perfect way to use up the frozen leftover veggies! We ended up with a very economical, kid-pleasing, and quick dinner. 5 starts all the way!
