Quiche in a Bag (Oamc-Freezer Cooking)

This is one of my favorite monthly freezer cooking recipes. So easy and cooks up perfectly every time. It's from the Freezer Cooking Manual, but I tweaked it a little. Can be done in endless variations. My favorite combo is chicken, bacon and spinach with swiss cheese. Also great as a vegetarian meal- just skip the meat and add extra veggies.

SERVES 6 -8 (change servings and units)

    Combine meat, vegetable, cheese, and onion. Place this mixture in a labeled 1-gallon freezer bag.

    With a mixer or blender, combine the milk, eggs, Tabasco sauce, flour and baking powder.
  3. 3
    Pour into the bag with the meat/vegetable mixture.
  4. 4
    Seal and freeze.
  5. 5
    To serve, thaw completely. Shake bag well and pour into a spray-treated or greased deep dish pie plate or quiche pan.

    Bake at 350º for 35-45 minutes, until lightly browned on top and well set in the center.

    Cool about 5 minutes before serving.

    I love that I can store this in my freezer and easily serve it for breakfast, lunch, or dinner. Even my husband who claims he doesn't like eggs thought it was good.

    I loved how easy this was to put together, and take out of the freezer to enjoy later! One odd thing happened to mine, however. After I thawed and baked it, the quiche came out pretty salty. This may be because of the diced ham I put in the mixture. Next time I may try less ham and omit the additional salt altogether. I also added mushrooms, spinach and cheese. Will make this again, as I love an easy but delicious breakfast!

    I do a monthly meal swap with mu moms group so I thought Id try this out with my family first. We loved it. We normally don't like quiche, I think it was the pie crust we didn't really like. I'm happy I found this recipe now I can make quiche with whatever is on hand. I used chicken in a can and leftover mixed veggies. I doubled the recipe for my big family so I used a 9x13 pan. my picky hubby and step son ate 3x! So yes, this is what Im making for my girlfriends this month!
