As we all know, this is one of the greatest lunch or brunch dishes ever invented. Prepare in advance, freeze, and bake when needed. This is one of the best recipes for Quiche I know of. Recipe source, "The Country Innkeepers' Cookbook".

SERVES 6 (change servings and units)

Ingredients

Directions

    Combine the cheese and flour and sprinkle into the pie shell.
  2. 2
    Spread the ham evenly over this.
  3. 3
    Combine the eggs, milk, salt and mustard.
  4. 4
    Beat until smooth and pour evenly over the cheese and ham.
  5. 5
    Bake at 375 degrees for 45 minutes, or until the custard is set.
  6. 6
    Serve warm, garnished with chopped parsley.
  7. 7
    To freeze: Prepare recipe through step 4. Wrap well with saran wrap and then foil. Freeze.

    To serve: Thaw in fridge overnight. Bake as directed.

Very easy, very cheesy! I used bacon instead of ham but otherwise followed the recipe. Far more straighforward than most other quiche recipes, yet all that great taste. Thank you!

    This is the first time I have ever made quiche. I have loved it for years but always thought that it was too difficult to make. This recipe has proved to me that is not the case. I did not have any swiss cheese so I used medium cheddar instead. It still tasted great! My mother and I both loved it. I will make it again for sure!

    I tagged this in the Freezer Tag game, to see if it freezes and reheats well. Also, I've been a complete failure at quiche all my life, but this seemed foolproof. Well, it was. For the first time, I made a quiche with a nice crust, a firm center, and a great flavor. Yay!! I made two, one to eat immediately, and one to freeze for later. I froze it after step 4, then thawed in the fridge for about 8 hours. I cooked as instructed, and DH says if he hadn't seen it frozen he would not have known it wasn't fresh. This is a great basic recipe and I'll have fun playing with other combinations of ingredients. Thanks, Tweeky!!

    I've never made quiche lorraine before, so I was skeptical that it could be so easy and involve so few ingredients. This ended up being really delicious though! It was so quick and simple to throw together, and the end result was fabulous. By the way, I used a deep dish pie crust and that was perfect; I wouldn't recommend using any smaller. Yum!
