Smoked Salmon and Goat Cheese Toasts

This is a pie I grew up with. Like the other Quebecoise person that commented in my family too, the salmon was mixed into the potato, not layered. So that is how I made it yesterday. This delicious pie is good on it's own, but just for fun I melted a slice of cheese on top of my husband's slice yesterday and he loved it. Growing up we always preferred to have a dab of catsup with it. Thanks for posting. This really is a delicious recipe and very simple, but then sometimes the simplest things are best!

I make this same pie with one addition to the ingredients inside the pie. Place mashed potatoes on the bottom, Spoon bechamel sauce or plain white sauce over the potatoes, then the same and layer again.This is an excellent pie and when cut, serve the sauce in a tureen so guests can spoon on each slice if desired.

Just a few comments from a Quebecer who has eaten this pie for all her life : the ingredients are exactly the ones my mom uses for hers! We do keep the bones, but discard the spine (you never know what could be hidden in there that could be bad for you, these days...). On step three, all the salmon pies I have eaten did have the salmon mixed with the potatoes, but of course, this doesn't mean no one makes layers as written here and it must look a bit fancier this way! One last thing: my mom always serves this pie with a bechamel sauce in with she adds two sliced hard-boiled eggs (don't ask me why! and I have to admit that I do it too...) Thanks for posting this, it is nice to see Quebec recipes on Zaar!

I have made this pie quite a few times now and I'm finally rating it.....Excellent! My son is a big fan of anything with salmon in it and he loved it. Very easy to make and when I was pressed for time and had no leftover mashed potatoes I have even used store-bought prepared mashed potatoes. Delicious. Thank you Shirl.
