Pumpkin Pie Wontons

This recipe won first place in the Vegetarian Times reader's Thanksgiving recipe contest.

    Preheat oven to 400ºF.

    In a medium bowl, mix pumpkin, maple syrup, brown sugar, and pumpkin pie spice.

    Place one wonton wrapper flat on work surface.
  4. 4
    Spoon 1 Tbsp.

    filling into center.

    Moisten edges of wonton with water and fold in half to form triangle.
  7. 7
    Press edges to seal.
  8. 8
    Repeat with remaining filling and wontons.
  9. 9
    Arrange filled wontons on ungreased baking sheet.

    Lightly coat wontons with nonstick cooking spray and sprinkle each with sugar and cinnamon.

    Bake until golden, about 16 minutes.

    Turn and bake 2 more minutes.

    Set baking sheet on wire rack to cool.

    These were so easy and good. I made exactly as recipe called for and would not make any changes. Pumpkin pie with a crunchy crust.

    GREAT recipe for those who want to try something different (but lite!). They were a big hit at my party, though they have a taste you get a bit tired of after 3 or 4, haha. Tips: try lumping low-fat cream cheese into the pumpkin mix if you like cream cheese. Serve around a tub of lite Cool-whip garnished with cinnamon-sugar. And if you have trouble finding "Wontons wrappers" in the store, they me be refrigerated in the produce section.

    Very easy recipe and got lots of raves! Try spraying with a little water instead of Pam.
