this is terrific! I had some leftover pumpkin from making pumpkin bread, so I thought I would give this a shot. What a quick way to have a bit of pumpkin pie and not all the calories! Thanks for the recipe

I've been waiting and waiting to try this recipe for years and finally got a chance to make it today. I'm so excited to have such a tasty treat that I don't have to feel guilty about noshing on! Quick, cheap, healthy; I thought you could really taste the vanilla pudding taste though so maybe I'll play with the pudding flavor next time. PS- There will be many more times!

This is the best. I used lemon pudding, that was all I had at the time. Will be making this often and will use vanilla or cheesecake next time.

This was just delicious and hit the spot after Thanksgiving dinner. I love being able to enjoy the traditional pumpkin without the heaviness and calories of a pie. The flavor isn't like the typical pie as the pudding mix definitely adds a nice lightness and vanilla flavor. I added about 3/4 cup of pumpkin as I love the flavor. Thanks!
