This is a nice way to sneak some fiber into your diet and also have a healthy breakfast. I do not make this oatmeal too sweet, but you could adjust the sugar/splenda amounts if you prefer sweeter oatmeals. This would be great with some chopped walnuts or pecans also.

SERVES 1 (change servings and units)

    In a bowl, combine all ingredients.

    Add some chopped nuts, if desired.
  3. 3
    Microwave oatmeal for 2-3 minutes depending on your microwave.

    Be careful of the oatmeal boiling over.

    This could also be done on a stovetop, campfire, or in a slow cooker.

    Give your oatmeal a good stir and enjoy with some flavored coffee.

    I like this with oat bran. I usually add a bit more, maybe cranberries or apples or raisins or nuts. I also like a touch of ginger and some almond milk. Pumpkin makes the oat bran so creamy!

    I just finished off my bowl of this pumpkin oatmeal. I was unsure at first, but it grew on me! You have to sweeten it up just right to get a wonderful pumpkin pie taste! I used 1/4 cup pumpkin and it turned out just right. Very Filling along with a glass of ice cold Milk!! Thanks, I will save this one!

    This was nice. I am trying to eat a lot of oatmeal and need a bunch of different ways to make it to keep from getting bored. I used 2 tsp. of splenda instead of the splenda/brown sugar mix. I also only used 1/2 tsp. of pumpkin pie spice because it seemed like so much. Next time I will use the full amount. Nothing flashy here, just basic comfort food to fill you up in a healthy way. Thanks Amber!
