These are a nice addition to your holiday desserts. I put vanilla frosting on them sometimes.

24 cupcakes (change servings and units)

Ingredients

  • 1 spice cake mix (2 layer size)

  • 1 (15 ounce) can pumpkin
  • 3 eggs
  • 1/3 cup vegetable oil
  • 1/3 cup water

Directions

  1. 1
    Combine all ingredients in lg mixing bowl.
  2. 2
    Beat on med for 2 minutes.
  3. 3
    Pour batter into 24 lined muffin cups.
  4. 4
    Bake at 350° for 20 minutes, or until pick comes out clean.
  5. 5
    Cool in pans 20 minutes.

Brought them to work for a Thanksgiving pot luck and they were a hit. SO SUPER EASY!!! I used cream cheese frosting and it paired perfectly with the cake. Thanks for such a simple but delicious recipe!

    These tasted great with a perfect pairing of pumpkin and spice. I topped these cupcakes with cream cheese frosting.

    I love this recipe! They were very light and fluffy with a delicate pumpkin flavor. I couldn't find a spice cake mix so I used a butter flavor cake mix with 1 1/2 teaspoons apple pie spice, 1/8 teaspoon cloves, 1/4 teaspoon nutmeg and 1/4 teaspoon cinnamon. I will probably add another 1/4 teaspoon cinnamon next time. Thanks for posting this recipe.

    Have made these three times in the last two weeks! Young, old, family, friends... everyones loves them. I frosted with my cream cheese frosting. Will be making these often.....soooo easy and soooo good!!!! Thanks MizzNezz your recipes are great!!!!
