A recipe from my uncle has been much loved by my family for years. Perfect if you bought too many pumpkins at halloween!

SERVES 24 (change servings and units)

Ingredients

Directions

    Cream together the first 6 ingredients. Add dry ingredients and mix well.
  2. 2
    Drop by the teaspoonful onto greased cookie sheets. Bake 12-15 minutes at 375°F.

Please believe me when I say that I am not really a fan of pumpkin-however I am rather partial to baking with vegetables,and so was rather keen to give this recipe a go. Well....I am SO glad that I decided to try this recipe! The recipe itself is very simple to follow,and the resulting cake like cookies are just delicious and wonderfully aromatic. I halved the mixture,leaving some plain and adding chocolate chips to the other half-I have to admit that the chocolate chips just had the edge!! A definate keeper!! Made for PRMR.

    A very simple cake-like cookie, DS loves the puffy type (I don't, I like mine crisp), so he very much enjoyed. I followed suggestions made be JESMom. Made for Please Review game.

    Delightful cookies, very similar to the ones made at my local store bakery. I used the mini chocolate chips to make them as close to the ones I seekout there...and they are delightful.     These are fabulous! I used butter, 1/2 sugar 1/2 Splenda, 2/3 cup egg whites, a 15 ounce can of pumpkin and 1/2 a cup of whole wheat flour with 2 cups of white flour. Everyone loved these! They have just the perfect amount of spice and taste like "fall"! Thanks for the great recipe! Made for Please Review My Recipe Game.
