Pumpkin Cake Bars With Cream Cheese Frosting!

I love pumpkin bars all year long, and these ones take the cake! Moist, delicious, and perfect everytime. Everyone asks for the recipe after they've tried them!

SERVES 12 -24 (change servings and units)

Ingredients

    Preheat oven to 350°F.
  2. 2
    Grease and flour one glass 9 x 13 inch pan.
  3. 3
    In a mixing bowl, beat together the eggs, sugar, oil and pumpkin.
  4. 4
    Sift together the flour, baking powder, salt, baking soda, salt and cinnamon; add to wet ingredients and mix thoroughly.

    Spread into prepared pan.
  6. 6
    Bake at 350° for 25 to 30 minutes.

    Remove from oven and allow to cool.
  8. 8
    For the frosting: beat together the cream cheese, butter and confectioner's sugar.

    Evenly spread over bars after they have cooled.

This was so good! I baked mine for about 25 minutes, but it could have used a couple more as the center was a bit undercooked, but it still tasted fabulous! I added a tablespoon of milk to the frosting to help it spread easier and there was plenty of frosting to go around. I will be making this again!

    These were great! I added nutmeg and cloves to the recipe for a bit more spice. My husband loved them and he usually doesn't eat cream cheese.

    These were great! I took them to work and they immediately vanished, with rave reviews and recipe requests from my colleagues. I tweaked the icing a bit; used 8oz block of reduced fat cream cheese, 2Tb butter and maybe 2 cups confectioners sugar (didn't measure, but about half a box). I also used Splenda baking blend in the bars instead of sugar. YUMMY!! Will definitely make these again.
