Very nice healthy recipe, use it as a side for meat eaters or as a main for vegetarians, actually it is totally vegan. Leftovers are even better.

SERVES 6 (change servings and units)

Directions

    Heat oil over medium-high heat, add onions & salt. Cook until starting to brown (15-18 minutes).

    Add garlic, herbes de provence, salt and pepper. Cook for 1 minute. Add tomatoes, green beans and potatoes.
  3. 3
    Cover and bring to a simmer. Simmer gently until veggies are soft, 25-30 minutes.
