Pound Cake Cookies

Once I tried these, I never bothered making 'traditional' sugar cookies again. A soft, flavorful cookie that is a MUST for me at Christmas. Note, the original recipe said they were cut-out cookies but I never was able to get them to work well that way. That is why I make the round ones as described.

SERVES 36 (change servings and units)

Ingredients

  • 1 (16 ounce) package betty crocker golden poundcake mix

  • 1/3 cup butter, softened
  • 1 teaspoon almond extract
  • 1 egg

Directions

    Heat oven to 375°F Mix half of the cake mix (dry), the butter, almond extract and egg in large bowl until smooth.

    Stir in remaining cake mix.
  3. 3
    Divide dough into halves.
  4. 4
    Roll each half 1/8 inch thick on lightly floured board. (I like using a half flour, half powdered sugar mix.).

    Cut into desired shapes.

    Or roll into 1-inch balls, place on ungreased cookie sheet and flatten with the bottom of a glass.

    Bake until edges are light brown, 6 to 8 minutes.

    Cool slightly before removing from cookie sheet.

    Cool completely.

    Ice with Buttercream Icing (I use Recipe #261024) and decorate, if desired, with sprinkles etc.

    Yields: 3 to 4 dozen cookies.

    TIP: Add sprinkles to the icing and mix well.

    Then ice cookies as usual. They are now decorated without a lot of the mess!

I have tried 20-30 different sugar cookies recipes, and in my opinion these are the best. Slightly crunchy on the outside and soft and cake-like on the inside. I use the mini ice-cream scoop to get all the cookies the same size and bake for 9 minutest at 375 degrees. (I like my cookies a little brown around the edges.) Try them, you'll like them.

    Fabulous!! Used a cream cheese butter frosting and red sprinkles and everyone loved them. I'm not an almond extract fan but went ahead anyway and was glad I did. They are crispy on the edges and soft in the center. I used my middle cookie scoop, and dipped the bottom of a glass in sugar to flatten. Made 18 cookies.

    This is a very good and very easy recipe. I was seduced by some comments which said it was close to Lofthouse cookies. I agree, tastewise, it is very close. However, the texture is not the same. Mine were quite crunchy on the outside, and slightly soft in the middle-- and that's cooking them BARELY beginning to golden on the edges. Lofthouse, of course, have no crunch at all. I did experiment with undercooking these a bit, and they were indeed more soft, but actually tasted undercooked. That said, as a sugar cookie not being compared to a famous brand, they are really outstanding unto themselves and super easy. I am posting the quick pink "Lofthouse" frosting I made for them. Try it out, it makes exactly enough for this recipe, and the cookies look outstanding.

    This cookie is so good that it's requested year round! They are relatively easy to whip up. If I'm in a hurry I just use store-bought icing to ice them, but it's no where near as good as the Buttercream Icing. You won't regret trying this recipe!
