Potato Salad With Chipotle Peppers(A Man's Salad)

Warning WARNING !! This Tex Mex salad is Very SPICY !!! Use your best judgment in how much Chipotle peppers you use. Taste as you add just don't dump them all in. Each pepper has it's own heat level. Yes us Girls love it too!

SERVES 8 -10 (change servings and units)

Ingredients

Directions

    Mix first 7 ingredients together.

    Toss in remaining ingredients except 1 tablespoon bacon and salt and pepper.

    Mix well.

    Taste to see if you need to add salt and pepper.

    I myself like lots of pepper.

    Top with bacon bits.

    Chill& Serve.

Delish. I used a half cup each of mayo and sour cream and then mixed these with the cilantro, sugar and chipotle — I used three chiles, seeds and pith removed — and set aside. (Actually, I was a little concerned about the heat, so I mixed in 2 T. butter, too. I think next time I’ll stop after 2 chiles and skip the butter.) I tossed all the remaining ingredients together by hand in a big bowl and then folded in the chipotle sauce. We needed to leave out the bacon for our vegetarian guests and I didn’t miss it.

    Yummy! These flavors combine so well... the smokiness of the bacon and the smokiness of the chipotle are perfect together.

    This went over wonderful at a family cookout. I spread out the heat from the peppers by putting them in the blender with the mayo, and half of the celery and scallions. It also gave the mayo nice color. In addition, I splashed my personal helping with a little texas pete.

    VERY nice!! I had been tired of the usual potato salad for a long time, and I figured, "hey, why not give this Man's Potato Salad a try", well, WOWIE! I am having this for lunch as I type this, and, I cannot tell you how much you should give this one a try. I added the celery, and kept the chipotle seeds out of it, and it was fantastic! Highly recommended!!
