The easiest Latkes ever! And, I did not need a lot of oil. They were not too greasy...I blot mine between layers of paper towels when I take them off the pan.

These are like my grandmother used to make! It is essential that you hand-grate the potatoes. To prevent the potatoes from getting brown make sure you store the peeled potatoes in cold water, mix the rest of the ingredients then hand grate the potatoes over the bowl and mix. I also used more oil- more like a half a cup--and dont measure! I cooked these on medium high ( works better) and made 10 nice sized latkes. Thanx joy for this great recipe.

This was my 1st attempt at Latkes and they were gobbled up by my family. I was happy to use minimal oil rather than overloading on it. I didn't have matzo meal so just used flour. Topped with applesauce - yum!

These are excellent,very easy to make. I served these with steak and a green salad
