Portuguese Kale Soup

DH and I have been going to a little place called Cafe Rio for years. About the only thing we ever order there is Portuguese kale soup. I have tried to duplicate the recipe for several years and this is as close as it gets. The linguica sausage is a must.

SERVES 10 (change servings and units)

Ingredients

    Wash kale under running water.
  2. 2
    Strip from tough stem, coarse chop and set aside.
  3. 3
    In the food processor, using the medium shredder blade, shred cabbage, drain and rinse beans.
  4. 4
    Heat the olive oil in a large stock pot, add sausage, chopped onion and minced garlic.
  5. 5
    Cook, stirring occasionally until the onion is transparent.
  6. 6
    Add remaining ingredients, bring to a boil, reduce heat and simmer for about 45 minutes to 1 hour.

    Adjust chicken stock as needed for desired consistency.
  8. 8
    Add salt and pepper to taste, remove bay leaf and serve hot with a coarse bread.

    I bought a bunch of kale for our iguana, only to find out he doesn't really love it and can only safely have it occasionally. So, I decided to search for a recipe to use it instead of being wasteful! This is where I ended up ... we now have a huge pot of BEAUTIFUL, very TASTY soup! I couldn't find the linguica sausage, so I used a lite (low-fat) smoked sausage and browned it real good with the onions and garlic! YUMMY! .................. I will have to amend my review just a bit ... I had typed that up before everyone tasted it. We have 3 teen boys, one of which is very picky about veggies and fruits (will almost never try). He looked into the pot and said, "What is that?!" I said, "It's a new soup; just try it. I think you'll be surprised, but if not, you don't have to eat it because I also have chicken & dumplin's almost ready." He tasted it and replied, "It is good!" He ate a big bowl of it! Everyone (all six of us) LOVED it! Thanks again!

    I think "euphoric" is the best way to describe how I felt after eating this soup. For a cold evening, this soup is just perfect. A reviewer for another recipe said that the flavors of kale and chorizo are heavenly together, so I used chorizo in my soup instead. It was OUTSTANDING. I used really good chorizo (from Spain), so that probably factored in a little, but I think the combination of other flavors all work perfectly together. I added more garlic and red pepper flakes, and that gave the soup more heat, which we like. Thanks for an excellent recipe!
