Love mushrooms, especially Portabello!! These could be done in countless variations, vegetarian or not.

Ingredients

Directions

    Thaw spinach and press out liquid, finely chop.
  2. 2
    Combine spinach, cheese basil, and pepper in a mixing bowl.
  3. 3
    Heat oven to 350 degrees.
  4. 4
    Clean mushrooms, remove stems.
  5. 5
    Place mushroom caps top side down on a lightly greased cookie sheet, brush with butter or margarine.

    Spoon about 2 tablespoons of spinach mixture into each cap.
  7. 7
    Sprinkle with tomato and salt.
  8. 8
    Bake for 12 minutes or till heated through OR place on the unheated rack of a broiler pan.

    Broil 4 inches from the heat for 3 to 4 minutes.
  10. 10
    Cut into quarters and serve.

Wow! I thought this would be good, but I didn't expect it to be as good as it was. YUM! I sliced the tomato instead of dicing, and laid the slice on top and it looked adorable on top of being delictable! I love attractive, delicious food!

    These are so amazingly simple, yet so very very good! We added minced garlic to the top and used just one big slice of tomato... omg... these were amazing... I will definitely be bothering Tom to do these again! Yum!

    A quick, easy recipe to prepare. I loved all the fresh ingredients. Thet portabello mushrooms gave the Pizzettas a very rustic, earthy flavor. Each little pizza had nice texture and pleasing visual appeal. This is a very nice, creative recipe. Definately one to keep on file.
