Pork and Rice Simplicity

My mother lived with us for several years before she passed away. She was able to cook as long as the dishes were short and sweet. This is one that we came up with that she managed with no problems. Just put it in the dish and set the timer. It never fails. Feel free to try different kinds of soup mixes in this recipe. Just use the dry soup mix that best suits your families tastes.

SERVES 4 (change servings and units)

Ingredients

  • 4 pork chops, uncooked
  • 1 cup uncooked rice
  • 1 package onion soup mix
  • 2 cups water

Directions

  1. 1
    Place pork chops in baking dish.
  2. 2
    Pour rice over top of pork chops.
  3. 3
    Mix water and onion soup mix and pour over rice and pork chops.
  4. 4
    Bake at 350 for 1 hour or until done.

I can't believe how super easy this recipe is! I'm working on some variations, since I don't really like onion soup mix.

    This was so easy, and a great last minute, pantry dish. I lightly seasoned the pork with garlic salt and cracked pepper. Also, I used 1 cup water, and 1 cup apple juice. It came out great. Thanks!

    I really enjoyed this dish. I thought the onion soup gives a wonderful flavor to the rice. Next time I might try mushroom-onion mix, you could really play around with this. Very easy to throw together too.
