Pork and Peppers Stir Fry

A nice fast stir fry recipe.

SERVES 4 (change servings and units)

Ingredients

Directions

    Make 4 servings of rice as directed.
  2. 2
    In a small bowl combine orange juice, soy sauce, honey, cornstarch, and ginger; blend well.
  3. 3
    Set aside.
  4. 4
    Cook pork until no longer pink.
  5. 5
    Add bell peppers; cook and stir 2-3 minutes.
  6. 6
    Add orange juice mixture.
  7. 7
    Bring to a boil.
  8. 8
    Boil 1 minute or until sauce is slightly thickened, stirring constantly.
  9. 9
    Serve over rice.

I would give this recipe more stars if I could - It was delicious. I did add 1 chopped Jalapeno pepper. Used fresh orange juice.. Just enough sauce as we don't like too much sauce.Served with steamed noodles and snowpea, carrot stir fry. Wonderful dinner

    The dish was so good, I only got 3 servings out of this recipe. The only complaint was not enough juice. Next time more peppers and double the ingredients for the sauce. THERE WILL BE A NEXT TIME.

    My husband really liked this recipe. I did double the sauce because I added some extra vegetables I had on hand and wanted to use up. Sliced some cauliflower florets, added a few mushrooms and onions and sauteed with the peppers (sauteed a bit longer because of the cauliflower). I will use a little less orange juice if I double the recipe again. Thanx, ilumythomas!
