This recipe was originally from a weight-watchers recipe. I altered it quite a bit to make it more feasible with the items already in my pantry and refrigerator. Kids will love to get involved with this one! It is a hit with all ages, tastes great, is healthy for you and has a wide variety of variations for those picky eaters! Be creative and most importantly, enjoy!

SERVES 4 -6 (change servings and units)

Ingredients

  • 20 slices turkey pepperoni, This is best because it is less greasy, but you can use regular if you wish
  • 1 small sliced onion
  • 15 ounces pizza sauce

  • 1 (6 1/2 ounce) can sliced mushrooms

  • 1 (4 ounce) can sliced black olives
  • 1 small green pepper, chopped
  • 1/2 lb lean Italian sausage, browned and well drained (optional)

  • 1 (8 ounce) can refrigerated biscuits
  • 1 1/2 cups shredded mozzarella cheese

Directions

    Preheat oven to 350 degrees.

    In bowl, combine sauce and all ingredients except cheese and biscuits.

    Cut biscuits into quarters. Add to mixture. Stir gently until biscuits are covered with sauce.

    Add half of the cheese. Mix until covered.

    Spray 9x9 baking dish with cooking spray.

    Spoon mixture into baking dish.

    Bake 30 minutes.

    Sprinkle with remaining cheese and bake an additional 10 minutes or until biscuits are done.

    Let stand 5 minutes before serving.
