Pop up Pizza Casserole

My daughter adores this recipe. She often requests it be prepared when her friends are coming over. I sometimes add pepperoni slices on top of the cheese and mushrooms in the meat mixture.

SERVES 8 (change servings and units)

Ingredients

Popover batter

Directions

    Brown meat.
  2. 2
    Add all but cheese.
  3. 3
    Simmer 10 minutes, stirring occasionally.
  4. 4
    In a small bowl, beat the milk, oil and eggs for 1 minute on medium speed.
  5. 5
    Add flour and salt, beat 2 minutes more on medium speed until smooth.
  6. 6
    Pour hot meat mixture into a 13x9 inch pan.
  7. 7
    Place cheese on top.
  8. 8
    Pour batter over cheese, covering filling completely.
  9. 9
    Sprinkle with Parmesan cheese.
  10. 10
    Bake 25-30 minutes at 400 degrees.

    Serve immediately.

My family loved this. It's so simple to put together. I used 3/4 lb hamburger and 3/4 lb Italian sausage putting pepperoni on top of the batter, then sprinkled with parmesan. Next time I will add mushrooms, green peppers. Makes a very tasty meal. A definate crowd pleaser. Thanks for a terrific reciepe!

    This was very good. My crust didn't "pop up" like I thought it would, but was still tasty. I halved the recipe and baked it in a square dish. My usually 2 picky kids each ate one serving and said it was "OK", but I (the chef) thought it was better, especially knowing how easy it was to put together.

    Michelle, my kids loved this. I did make a few slight additions. I used 1 t. minced garlic, 1 t. dried oregano, and added salt and pepper to the meat mixture. I think next time I will do as you suggested and add pepperoni and mushrooms. This made a great weeknight easy to make meal Thanks.

    I made this last night for my kids and they all went nuts. They ate every last bit of it!!! I guess that would mean that they liked it. My dd#1 wants it on a weekly basis. This was a real winner in my house...Thanks Michelle!!!!
