Polynesian Sausage Supper

This is a super quick, inexpensive, yummy dish. I found this recipe in Quick Cooking a few years back and make it frequently. I'm not a huge fan of sausage but I can gobble this up easily.

SERVES 6 (change servings and units)

Ingredients

    In a skillet, cook the sausage, onion and green pepper until the sausage is lightly browned; drain.

    Add tomatoes, broth brown sugar, garlic powder, and pepper.
  3. 3
    Drain pineapple, reserving juice.
  4. 4
    Stir pineapple into sausage mixture.
  5. 5
    Bring to a boil; cook uncovered for 5 minutes.
  6. 6
    Combine cornstarch and reserved pineapple juice until smooth; gradually add to sausage mixture.

    Bring to a boil; cook and stir for 2 minutes or until thickened.
  8. 8
    Serve over rice.

    Just like you said, quick, easy, and yummy! I've made this a few times over the years (I think I found it in Quick Cooking as well...) and it is a good weeknight meal recipe to have on hand!

    This is a nice weeknight dinner as it comes together in a matter of minutes. It is quite tasty and is very filling. I will make this again, but may leave out the tomatoes and just add some juice since I think this would just as good without them. Thanks for a great recipe!
