This delicious chicken salad recipe was given to me by my aunt. The cooking time listed is the time to chill the salad before serving.

SERVES 6 (change servings and units)

Ingredients

Directions

    Combine chicken, celery, pineapple or grapes, carrots and almods.
  2. 2
    Stir together the mayonnaise, sour cream, curry powder, lemon juice and salt.
  3. 3
    Pour over the chicken and toss lightly.
  4. 4
    Chill for about an hour to allow the flavors to develop before arranging on salad greens and serving.

A wordeful summer salad! I loved it, the celery was great with curry flavour and so light. I used low fat greek yogurt instead of sour cream. I only used pineapple cause I didn't have grapes but next time I'll use a combination of both. Its a total keeper! Made it for ZWT 3, as a big thanks to our captain Dreamgoddess for all the hard work during this tour!!!

    Truly a Caribbean treat, as well as wonderful for even "pretending" you are on vacation, even if it is just sitting in your office. Packs well, tastes delicious, and is so versitile served on top of a salad, with crackers, (this is how we had it) or on a sandwich with some Artisan bread. The taste of the chicken, celery for crunch, the carrots, and pineapple coupled with the almonds really make this a special chicken salad. It took no time to put together, and just let it sit in the fridge for about 2 hours. Perfect! Thanks, Dreamgoddess! Made for ZWT3 07

    Very good! I used at least 3 cups of diced chicken. I think only 2 cups wouldn't be enough chicken in relation to the amounts of other ingredients. I used a combination of pineapples and grapes as suggested; that's a great combination. I added some chopped onion for some extra flavor. I liked the creaminess that the sour cream gave. The curry and the toasted almonds added a special something too. Thanx for posting this. I'll make this again (with my little changes/additions).

    Delicious! Creamy, fruity and crunchy. I used a combination of pineapple and grapes as suggested. Carrots in chicken salad are new for me, but I thought they added a nice color and texture. A lovely light dinner or lunch. Thanks, Dreamgoddess, for posting!
