Poached Eggs in Catsup

Surprisingly good.

    Melt butter and catsup in skillet till HOT.

    Break eggs into catsup mixture separately; cover with tight fitting lid and cook on LOW heat till desired doneness is reached.

    Remove with slotted turner and place on buttered toast.

    2 servings.

I really like ketchup with my eggs and Ill eat almost anything but this was too "ketchuppy" if I can use that word. And if I had to eat this as a hangover cure, I dont think I would be doing to well afterwards. But personal opinion might be different. Sorry.

    This made a wonderful Sunday brunch. I added some shredded fresh basil into the catsup. I served it on a slice of ham or Canadian Bacon on top of a Pillsbury Perfect Portions Biscuit and garnished it with some shredded sharp cheddar cheese. It's almost scary just how elegant you can make this look!! Everyone loved it so much I almost feel guilty that it was so quick and easy!

    Nervous about making this, didn't tell my DH what I did until after he ate it, he and my DS's loved it! I put it on toasted bread along with canadian bacon and a slice of american cheese Thank You Darlene Summers!

    WOW !! Such a simple idea, but oh so good. The catsup has enough flavor that no additional salt or pepper is needed, and the butter makes a very smooth sauce. I did add just a tablespoon of water to make sure that the sauce covered the bottom of my 8 inch skillet and my two eggs were done in 4 minutes.
