Plain Ole Italian Bread Abm

Recipe #175079 | 3¼ hours | 15 min prep | add private note

Just was looking for a good, plain italian bread. You know the kind thats crusty on the outside, chewy on the inside. Italian style bread without all the herbs. Easy for the bread machine. Even though RecipeZaar is my favorite, I searched the internet. Found different recipes around the internet. Combined some from here some from there and kind of changed the technique. You get a nice high crusty loaf with a chewy interior and it smells wonderful. As close to the oven as it gets!

SERVES 6 -8 , 2 Lb Loaf (change servings and units)

Ingredients

Directions

  1. 1
Place Water, Olive Oil, Brown Sugar, 2 Cups of the Flour, and then Salt in the pan of the bread machine. Then add the remainder 2 Cups of the Flour (make a little well) and add Yeast.
  2. 2
Use the French Bread Setting, Medium Crust, 2 lb loaf.
  3. 3
As the dough is forming you may want to check and scrape the sides a time or two.
  4. 4
Let the machine do its thing and enjoy the aroma!

I have already been to the store twice today, started this bread and found I have no olive oil (which is unheard of in my house!), and only 1 cup bread flour. Had to use butter-baking crisco stick, and 3 cups of whole wheat. I will let everyone know how it comes out!!

Love this Bread! Used dough cycle on bread machine. When cycle was complete, I divided dough into 6 (bun size). Placed on lightly sprayed parchment paper in warm oven to let dough rise again. Baked at 350 till lightly browned. Thanks for the great recipe.

I made this into bread bowls, which turned out wonderfully. I followed the ingredients, except for using all purpose flour (since that's what I had on hand). I used my dough cycle and pulled the dough after one rise. Then I cut the dough into 4 equal sized round "bowls", kneaded them slightly and let them have a second rise for about 25 minutes after I brushed the tops with olive oil and covered them with wax paper. I baked them for 20 minutes at 425, pulled them from the oven and added an egg white/water wash and returned them to the oven for another 5-10 minutes until golden. I pulled the centers when they were still warm and served chili and potato soup inside. Thank you so much for the great ABM recipe!!

This is awesome bread! I put it together differently than you did, though. For all bread machine recipes, I always heat together in a pyrex measuring cup the liquids, oils, and salt. In another container I mix together all the dry stuff except yeast. Then I add to bread machine, liquid first, then flour mixture, then yeast. Oh yes, I did also add 4 tsp of vital gluten to the recipe. I used the dough cycle and made two loaves in the oven. Thanks for such a super recipe! I have tried several and this is the best, by far.
