Pizza Quesadillas

Unlike traditional Mexican quesadillas, it calls for Italian meats, cheeses and seasoning. Serve it with a green salad topped with Italian dressing for a simple dinner for two.

SERVES 2 (change servings and units)

    In a small saucepan, cook spaghetti sauce over medium-low heat for 3-4 minutes or until heated through.

    Meanwhile, spread butter over one side of each tortilla.
  3. 3
    Sprinkle unbuttered side of two tortillas with mozzarella cheese; top with salami and pepperoni.

    Sprinkle with Parmesan cheese and oregano.
  5. 5
    Top with remaining tortillas, buttered side up.
  6. 6
    Cook on a griddle over medium heat for 2-3 minutes on each side or until cheese is melted.

    Cut into wedges; serve with warmed spaghetti sauce.

Very delicious. Instead of dipping into tomato sauce, we just spread it right IN the quesadilla. We think this should be for four servings---unless it's a main dish. Also great as an afternoon snack (using the leftovers from lunch!). This is a KEEPER!

    Dear Daughter (11 y.o.) made these for our lunch today, and I must say, we made pigs of ourselves! Ymmm! She heated the sauce in the microwave--which went very slick. I think next time, we'll use some pre-cooked sausage crumbles for a different taste! Definitely a KEEPER-recipe!

    This is a winner! I added these to my appetizer buffet and should have tripled the recipe. Everyone kept asking "Where are those little pizza sandwich thingys?" when they were gone. Excellent! They were a tiny bit hard to turn in the pan (without losing the stuffing), so if you add just a touch of mozz over the oregano the melted cheese helps the top tortilla stick when you flip it.

    I love these! I use whole wheat carb balance tortillas and turkey pepperoni with lots of veggies. Yummy!
