Pink Salad

This has been my family's favorite salad for Thanksgiving and Christmas dinners since I was little. It was originally called Lime Party Salad and my mom got it out of the Betty Crocker Picture Cookbook in the early 60's. My mom made it with cherry Jello and my little brother names it "Pink Salad".

SERVES 16 (change servings and units)

Ingredients

Directions

    Melt marshmallows and milk in top of double boiler.
  2. 2
    Pour hot mixture over 1 pkg Jello. Stir until dissolved.
  3. 3
    Stir in cream cheese. Stir until cream cheese dissolves.
  4. 4
    Add pineapple. Let mixture cool.
  5. 5
    Blend in whipped cream and mayonnaise gently.
  6. 6
    Chill until firm.

This is a rich and tasty jello salad. I used black cherry jello and whipped one cup of heavy whipping cream. I like the pineapple in it and think adding some nuts would be a nice touch too. The mayonnaise adds a bit of tang but is not overwhelming. Thank you Lavender Lynn for sharing your family recipe with us! Made and reviewed for Please Review My Recipe tag game.

    Delicious! I made this for family dinner and got to have about 2 bites! Nieces and Nephew would have made a meal of this if my sister had let them!!! Thank you for posting! Already on the agenda for Thanksgiving! Made for "Think Pink" in honor of Breast Cancer Awareness Month tag, 2008

    This was great. My granny used to make something very similar to this but with orange jello. I used skim milk, light cream cheese, fat-free cool whip, and light mayo. Very refreshing and we all enjoyed it.
