Pink Potato Salad

A vivid pink potatoe salad with beats, even beat haters like it! Always a conversation piece at potlucks! This is a Colombian recipe.

SERVES 6 (change servings and units)

Ingredients

    Drain beets and combine all ingredients and mix together.

    Refrigerate until chilled.
  3. 3
    You can also use fresh beets- just boil and dice, but this will add to the cooking time.

    Serve and Enjoy!

Mmmm, this is super tasty!!! The potatoes go so well with the earthy beets and sweet carrots. The onion adds a lovely bite to it and the salt and pepper make the taste experience perfect! I was out of mayo so I subbed it with some creamy yogurt, which was really nice. I will surely make this again as it tastes great, is easy to prepare and looks very special, too!     My MIL makes this pink potato salad, but without the carrots or onions. She also adds green olives (pimiento-stuffed). She does make a version with carrots, but just the potatoes, mayo, salt, pepper and a can of mixed peas and carrots. This version, of course, does not have the beets in it.

    I took suggestions from Parsley & included some dill as well as 2 hard-cooked eggs! Then I took my own advice & didn't peel the potatoes but just cooked & diced them (What can I say but that I appreciate the additional nutrition in the peel!) & this all made for A VERY SATISFYING POTATO SALAD, albeit PINK! Thanks for a keeper of a recipe! [Tagged, made & reviewed in the Think Pink Tag Game in Honor of Breast Cancer Awareness]

    Very pretty and yummy salad. It has a pleasant tangy flavor. I added dill weed just because I thought it would go well with everything in the salad..... and it did! I think hardboiled eggs would be great in this too. Thanx for sharing this pretty pink salad recipe!
